Almost twenty years ago, I tried making a sourdough starter using a packet of yeast.

It ended up turning into a science experiment and growing all kinds of pink and black mold (which is why I always recommend using ONLY flour and water to “start” your starter. More on that in a second).

About ten years later I decided to try again (took me a while to get over that one) and eventually I managed to get my own starter going, but…

It was EXTREMELY sour. So sour my kids wouldn’t eat it, and it never turned out as light or fluffy as the store-bought bread.

Frustrated, I abandoned it in the back corner of the fridge and hardly ever touched it again…

Until one day, I decided to conquer sourdough (cue Rocky theme song).

I mean goodness, if our ancestors could figure it out, so could I (and so can you, by the way)!

With a few simple tweaks and some trial and error, my starter transformed from sour and scary to bubbly and sweet. Even better, my bread rose beautifully (it wasn’t my baking skills after all).

Now, my kids love my sourdough waffles, and when they first tried them, they didn’t even know it was sourdough bread!

And my sourdough brownies, no joke, are the ONLY kind of brownies we bake now.
